Out of the Smoke, Into the Smoker

I want to start today by thanking you all for your patience and support. Getting into the new routine of maintaining a blog has been a new experience, as have many other things in the journey of ArnieTex. Doing what I love and sharing that is truly a blessing. We have a new video going up this evening - stay tuned!

The month of May ended with a Barbecue Competition Master Class in Laredo, TX which was filled with several great cooks from across Texas. It was a great time and the cooks left with “information overload” - translation: you will probably be seeing them walking at their next competition now that they have taken their great cooking to the next competitive level. I’m grateful to all who attended and wish you the best on the smoke trail. Remember, my phone and email are always open to any questions or help when it is needed.


The last weekend of May took us to Victoria, TX. As much as we love staying close to home and supporting our local competition community, the stakes and prizes were too high in Victoria to miss. Sometimes you just have to make that hard decision and travel. In this case, it was the right call as when the smoke cleared we walked with a 4th Chicken, 3rd Ribs and huge 2nd place brisket. In a field of 53 teams this yielded just enough points to nab us another Grand Champion win and a nice paycheck to match.


Congrats to everyone that got a walk to the stage that day. It was a huge high to see my friend Gary Kelly, head cook of Road Crew BBQ, and his family standing next to us on the podium with their Reserve Champion win. Gary attended one of our Master Classes earlier and has been on absolute fire with walks and wins ever since. The concerts that night were a great end to a weekend. We retired a bit early that night in thankfulness and in mental preparation for the fast and furious month of June. We have three - maybe four - Group Competition Master Classes coming up over the weekends in addition to a few private classes also.


Catch us on the smoke trail or in our backyard of The Valley. We have a lot going on but I am always ready to touch base on ideas, classes, and events. Thanks for following us and again stay tuned for our upcoming cooking videos and other exciting things happening behind the smoke scenes.
